I love to eat seasonal. Most of my food is raw but I wanted to cook something with some of my favorite seasonal vegetables. So I came up with an idea to make a savory dish with lots of slow burning carbs for all the running I do in my favorite season.
1 head of cauli, chopped and then blended into a rice-like consistency
1 can of pumpkin (fresh better)
1 cup raisins
1-2 apples cut up
1/2-1 cup pecans or walnuts
1/3 cup maple syrup
1 tsp Apple Cider Vinegar
1 tsp cinnamon
1/2 tsp nutmeg
Add all ingredients into a pot on stovetop, stir, heat on low for 20 minutes. Enjoy!
